If you want to impress somebody try this easy recipe…

Absolute Dolphin

4 to 6 - 6 to 8 oz Mahi Mahi Fillets
1 - Stick of Butter
¼ - Cup Absolute Vodka (Plus some for the chef)
Juice of One Fresh Lime
1 Tbsp. Capers
A Branch Of Fresh Dill
Olive Oil
Paprika
 

Salt & Pepper Prepare your Dolphin fillets with a drizzle of olive oil, a sprinkle of Lime Juice, salt & pepper, and a light sprinkle of paprika.
Grill the fillets until they barely begin to flake easily turning them only once. They will continue to cook a little after you remove them from the grill. Don't overcook!

 Meanwhile, in a pan on your gas burner (or on the stove) melt 1 stick of butter until most of the foam disappears. Add the rest of the fresh lime juice (at least 1 Tbps.), 1 Tbsp. of capers, 1 small sprig of Dill, and ½ cup of vodka. Turn up the heat, then remove the pan from the heat as soon as it begins to boil rapidly. Serve the fillets on plates (or a platter) and add another sprinkle of salt & pepper to taste. Spoon a portion of the Vodka sauce over each fillet and garnish that with plenty of snipped Fresh Dill and thin slices of Lime.

 This one has raised a lot of eyebrows around my house…Great with a bottle of Pinot Grigio (or some more of the Vodka!). Enjoy!
