Athenian Artichoke Dip

Feta cheese adds a distinctive flavor to this thick and creamy artichoke dip.

1 can (14 oz.) artichoke hearts in water, drained and chopped.
4 oz. feta cheese, chopped
¼ cup red or green bell pepper, chopped
1 garlic clove, pressed
1 cup mayonnaise
3 green onions with tops, thinly sliced
¾ teaspoon dried oregano leaves
¼ cup sliced almonds (optional)

Preheat oven to 350 degrees. Chop artichoke hearts, cheese and bell pepper. Place in bowl. Press garlic into bowl.Add mayonnaise, green onions and oregano; mix well. Spoon into baking dish; top with almonds, if desired. Bake 25-30 minutes or until golden brown and bubbly.
Serve with Baked Pita chips, if desired.

Yield: 2 ½ cups (20 servings)
 Approximately 110 calories and 11 grams of fat per serving (2 tbsp. dip).
