Serves 6
12 large eggs
1 red pepper - diced small
1 yellow pepper - diced small
1 red onion - diced small
3 garlic cloves - chopped
1 beefsteak tomato - diced small
1 chorizo sausage - chopped
1/4 cup Italian parsley - hand torn - no stems
1/4 cup cilantro - hand torn - no stems
1/2 cup grated manchego cheese
Preheat oven to 350.
Heat 1 tablespoon olive oil in sauté pan or cast iron skillet on stove.
Add peppers, onions, chorizo and garlic.
Sauté until caramelized.
Toss in tomatoes, parsley and cilantro and sauté.
Crack eggs on top of sautéed veggies and place in oven for 5 to 10 minutes - this depends on how you like your eggs cooked.
Remove from oven and sprinkle cheese on top.
